We spent Christmas Eve with our good friends the Genzale's eating a traditional Italian Feast of the Seven Fishes. It was WONDERFUL as usual, and Christmas morning was very nice just our little family enjoying each other and having a relaxing time. Randall's parents flew in that afternoon and we had a wonderful (if I do say so myself) Christmas dinner with them and the Giles.
Here is the recipe for the Peppermint Hot Fudge Sauce that was AMAZING over vanilla ice cream with crushed candy canes on top!
1 cup heavy cream
1/3 cup light corn syrup (plus more to adjust consistency)
12 oz bag of semi-sweet chocolate chips
1 tsp peppermint extract
Combine heavy cram and corn syrup in a small saucepan. Stir to combine, and bring just to a boil over medium-high heat. Remove from heat, and add chocolate and peppermint extract.
Whisk until the chocolate is melted. If necessary, adjust consistency with additional corn syrup. Serve hot!
